  1. Ehrliche Reue? Mein Nazi-Großvater und seine Umkehr

    lian Pfeffers Großvater war überzeugter Nationalsozialist. Nach 1945 gehörte er zu den wenigen, die seine Vergangenheit nicht verschwiegen. Als er in den 60er-Jahren als Professor für Soziologie an die Universität Münster berufen wurde, ließ er eine studentische Vollversammlung einberufen. Er diskutierte mit den Studierenden, warum er Nationalsozialist war - und nun aber keiner mehr sei. So wurde es in der Familie erzählt. Kilian Pfeffer wollte wissen: Was war mein Großvater, der 1971 starb, für ein Typ? Der Enkel hat in Archiven geforscht und mit Menschen gesprochen, die seinen Großvater erlebt haben. Je mehr er herausgefunden hat, desto komplexer wurde das Bild.

    2016 starb der Restaurantkritiker Wolfram Siebeck mit 86 Jahren. Ein Jahr zuvor übergab er dem Regisseur und Autor Ulrich Gerhardt 36 Audio-Kassetten, die er in den 1980er-Jahren bei seinen Restaurantbesuchen besprochen hatte. Dokumente des Elends. Denn es war keine gute Zeit für gute Küche. In Frankreich ruhte sich die Gastronomie allzu bequem auf ihrem Weltruf aus. In Deutschland konnte man von Weltruf nur träumen. Hier waren die Saucen mehlverschwitzt, dort waren sie dickhäutig. Und allüberall war Servicewüste. Siebeck litt. Und schimpfte. Und stellte sich selbst an den Herd. Seine Artikel polarisierten. Die einen kochten fasziniert seine Rezepte nach. Die anderen fühlten sich durch seinen kritischen Absolutheitsanspruch angegriffen. Siebeck urteilte mit Furor und Humor, begeistert oder enttäuscht, leidenschaftlich und hochanspruchsvoll.
